For the 4th year in a row, Chef Andres will be cooking up a delicious seafood dish for the Tortuga Music Festival goers. Each year, Rock the Ocean puts on a "Conservation Village" at the Tortuga Music Festival to help raise awareness about ocean and marine conservation. Part of the Conservation Village is the "Green Gourmet" tent - hosted by Sea Delight, which offers concert-goers the opportunity to sample sustainably sourced seafood dishes prepared by local chefs.
Being avid scuba divers, both Chef Andres and his wife and co-owner Alison are huge supporters of ocean conservation. That's why this is one of their favorite events to do.

For the 2nd year in a row, Chef Andres is excited to be participating in the FL Panther's Guest Chef program. Chef Andres has prepared special menus for both club levels at the February 26th game.

In 2014, we were invited to participate in the South Beach Wine and Food Festival's "Best of the Best" event at the Fountainbleau. This year we are proud to announce that Chef Andres will be joining Chef Anne Burrell at the "Taste of Fort Lauderdale" Seaside Eats event of the SOBEWFF.
Per his usual, Chef Andres is going stepping outside the box and serving Lionfish. As avid scuba divers and ocean conservationists, we are always looking for opportunities to bring awareness to the importance of saving our seas. This will be Chef Andres' 3rd year of doing his version of the Italian "Feast of the Seven Fishes" on Christmas Eve. Legend has it that this tradition started in southern regions like Naples & Sicily but is little known in the northern Italy. Though many facts surrounding the feast are unknown, there are two definite truths: It's about seafood and family. Two of our greatest loves! Make sure you call early to reserve your seat.

Tuna Crudo - Seared rare and served with harissa and oil
Charred Octopus - Served with roasted garlic and tomatoes
Seared Scallops - Served with sweet creamed corn polenta and spek
Sauteed Razor Clams - Served with baby arugula, shaved fennel, citrus and chili salad
Italian Seafood Paella - "Italian" version of the classic Spanish dish
Grilled Swordfish - Served with Italian Salsa Verde

This year, Chef Andres has created a fabulous 5-course tapas style tasting menu.
To start the evening, Chef will be serving a delicious Smoked Fish Dip appetizer paired with a bold Chilean Carmenere. The second course of the evening, a "Surf and Turf", will surely be a crowd pleaser. Chef will be using Marinated Skirt Steak wrapped around a Lionfish Yucca Croquette. This dish will be paired with a light Italian Ballarino. Next up will be last year's favorite, the Lionfish Corn Dog paired with a beautiful Spanish Verdejo. For the 4th course, Chef will be serving a Blackened Lionfish Taco with Tropical Salsa. These will be paired with an elegant Italian wine called 3 Utin. For the beer lovers out there, the last course will be an IPA Lionfish over steamed Chinese Rice. We have selected a rich and smooth Spanish Alas Negras for this last dish.
